Something I discovered as part of this was that Outlook 2011 for Mac appeared to be using the Account Description field (as opposed to Full Name field) in my Account settings to set up and edit my signatures. So for example, if you had multiple users that had put “Work Email” under their Account Description field, when they would go to edit and assign a Signature, their own identity was not showing up under “Default Signatures” and instead they would see a “Work Email” name. I can’t say what will work in anyone else’s environment, but so far in ours having users put their first and last name in both the “Account Description” and “Full Name” fields (under TOOLS Accounts) has been successful in keeping this problem from re-occurring. Before this change I could “cause” the incorrect email assignments to happen to my own Contact information by just trying to add a default Signature. Hope this helps someone, cheers!

Provided this is a legal copy of the software, the product key was typed in when the OEM installed it. When you call Microsoft to activate by phone, they will ask you for a challenge code which Office will give to you (they will show you how to get it). They will then provide you a response code to type back in for the activation process.

The issue did not occur in Outlook for PC or using OWA / iPhone ActiveSync. It was definatley an issue caused by the Mac. I checked everywhere i could to find a setting – but couldnt find one within Outlook. The only thing i could find referencing Homer Simpson was the reigstration info of Office. So we followed this article – Unfortunatley this did not help, and actually left Excel a little unstable but that was easily fixed with a few restarts. We then resolved to research the issue for a few days and come back to it.
So I’ve got Windows in space #1, and I can toggle to space #2, where my browsers are open, and #3 where my office suites open up, and these applications are only visible in their respective spaces. The languages I work in require a lot of diacritics, and I can’t memorize the keyboard layouts of three or four languages. Diacritics are a complicated pain to type in Windows (requiring hex codes to be memorized, etc.), but they are easy in the Mac. So I can switch to a Mac application, type the text with the diacritics, and then paste it into the Windows application.

Hmm After another day of googling, I found out what was wrong: Microsoft somehow cannot accept that I am using the same copy of Windows 7 or Office 2010 on my Bootcamp partition and the VM! I, on the other hand, didn’t think that I was violating the License Agreement by running Windows via two different ways on the same computer. Yesterday afternoon, I caved. I do a tremendous amount of work in Word and PowerPoint, and I just wanted them to run natively on my Macs. I wanted to use Office 2016 and stop all the weirdness that I have to go through when running a Windows instance to edit a Word file.
So Outlook should search for with this day criteria and find mails also from 2015 but it instead searches only for 3 day timeline. (SpotLight re-indexing was performed 3 days ago.
